Ingredients
• 300g smoked trout
• 1 cup mint leaves
• 1 cup coriander leaves
• 125g bean sprouts
• 1/2 red onion, thinly sliced
• 2 cups Chinese cabbage, sliced
• 1/3 cup toasted unsalted cashews
Thai-style dressing
• 1/4 cup fresh lime juice
• 1 1/2 tbs fish sauce
• 2 tsp sesame oil
• 1 1/2 tbs brown sugar
• 1-2 small red chillies, thinly sliced
Method
1. Place the smoked trout along with all of the other ingredients into a bowl. Toss.
2. For the Thai-style dressing, combine the ingredients, except chilli, in a small bowl and mix well until the brown sugar dissolves, mix in the chillies.
3. Pour the dressing over the trout salad and gently combine
