Ingredients:
- 1/ 3 cup honey
- 3cm ginger, finely chopped or grated
- 3 garlic cloves, crushed
- 2 tablespoons lime juice
- 12 raw prawns, deveined, heads removed, tails on
- 1 dozen scallops
- 1/4 cup peanut oil
- 4 fish fillets
- 1 red onion in wedges
- 1 carrot, julliened
- 1 green capsicum, jullienned
- 100 grams snow peas
- 1/2 cup coriander leaves finely chopped
- Coriander to garnish
Method:
- Combine the honey, ginger, garlic and lime juice.
- Set half aside.
- Add prawns and scallops to remaining marinade. Cover and marinate for 15 minutes.
- In a frypan, heat oil, add fish and cook for 2-3 on both sides.
- Remove and keep warm.
- In frypan, add 1 tablespoon of oil and add prawns and scallops. Cook fro 2-3 minutes until cooked through.
- Remove and keep warm.
- Heat remaining oil and add carrots, onion,capsicum and cook for 2 minutes. Add snow peas and stirfry for further 1 minute.
- Remove from heat and toss coriander through vegetables.
- Divide vegetables into four portions and top with fish, prawns and scallops.
- Aadd coriander to garnish and drizzle with leftover marinade.
