Honey and Ginger Seafood Stack

Ingredients:

  • 1/ 3 cup honey
  •  3cm ginger, finely chopped or grated
  • 3 garlic cloves, crushed
  • 2 tablespoons lime juice
  • 12 raw prawns, deveined, heads removed, tails on
  • 1 dozen scallops
  • 1/4 cup peanut oil
  • 4 fish fillets
  • 1 red onion in wedges
  • 1 carrot, julliened
  • 1 green capsicum, jullienned
  • 100 grams snow peas
  • 1/2 cup coriander leaves finely chopped
  • Coriander to garnish

Method:

  • Combine the honey, ginger, garlic and lime juice.
  • Set half aside.
  • Add prawns and scallops to remaining marinade.  Cover and marinate for 15 minutes.
  • In a frypan, heat oil, add fish and cook for 2-3 on both sides.
  • Remove and keep warm.
  • In frypan, add 1 tablespoon of oil and add prawns and scallops.  Cook fro 2-3 minutes until cooked through.
  • Remove and keep warm.
  • Heat remaining oil and add carrots, onion,capsicum and cook for 2 minutes.  Add snow peas and stirfry for further 1 minute.
  • Remove from heat and toss coriander through vegetables.
  • Divide vegetables into four portions and top with fish, prawns and scallops.
  • Aadd coriander to garnish and drizzle with leftover marinade.
